They believe because they want to go to heaven, they believe because they want somebody to protect them, they believe thanks to dogmatism.
A jesuit used to tell me that there is no philosophical argument against or in favor of the existance of god. You simply belief, or not belief (I dont believe because I dont have a proof of its existance).
You second question is about the history of the bible, I suggest you to google history of the bible and check out all the transcriptions and all the chapters that werent approved to be able to appear in the bible.
